I’m about to have very large amounts of apples enter my home! On monday we are going down to hood river. I intend to make some apple butter, apple bread, and I’m going to learn how to make applesauce….and can it! Yum!!!!
All that thinking about canning make me want to make something…. I’m ridiculous sometimes. We are low on jelly, so I went ahead and bought the stuff for strawberry freezer jam. My last batch didn’t set quite right, but I seem to have fixed the problem this time. It’s not hard to make, I swear.
All you need is fruit, pectin for freezer jam, and sugar. Alot of sugar. As my husband said when I measured it out, “No wonder jelly is so good!”
I literally followed the instructions on the box. You have to or it won’t set and it will have a weird texture. (Like my last batch that still tasted amazing but looked…..funny)
I had to cut my strawberries before I crushed them. I used my fabulous mix and chop from pampered chef to crush them. I’ve heard a potato masher works well.
Add the sugar to the crushed fruit. Let it sit for about 10 min. Make the pectin to the package instructions and mix it in until the sugar dissolves the rest of the way.
Spoon it into your jars cleaned with HOT soapy water. It will keep in the freezer for 6 months, or in the fridge for about 6 weeks.
