Chicken and biscuits

Welcome to another episode of lazy cooking with rachel! I work 10 hour days at a daycare. When I get off work I do not want to worry about dinner. It’s exhausting sometimes to think about making whatever meal I have on the menu. For some reason dinner seems less daunting at lunch, (Go figure) so I experiment with slow cooker recipes

(Click on the link and it will take you to a slow cooker similiar to mine. Basic, cheap, but functional).  Today’s recipe is cheesy chicken and veggie. The original recipe called for cream of chicken soup. I use sos mix instead. It’s a simpler way to deal with cream of whatever mixes.


Chicken and biscuits...yum!

Cheesy chicken and veggies
1 1/2 pounds boneless skinless chicken breasts
2 cans worth of sos mix
1 1/4 cups chicken broth
1 cup shredded cheddar
1 small head broccoli, chopped
Baby carrots.
1 cup uncooked rice

In a bowl,  mix together the sos mix (prepared), the broth, and the cheese. Put enough baby carrots to cover the bottom of the slow cooker. Add broccoli. Top with the chicken. Pour the sauce mix over the chicken. Cook on low for 6 hours. Cook rice. Add to slow cooker. If it looks like soup, shake a little bit of flour and water in a jar and add to slow cooker. This will help thicken it. Top with cheese. Let sit for 5-10 minutes.
Serve over biscuits.
