I love all the salgadinhos they have in Brazil. You go into a store and there all are sorts of goodies staring at you. But, alas, the States doesn’t have them. There are some that can be made in the States. 😉 My best friend requested something Brazilian, and this was the simplest thing I could think of.
Ground beef, green peppers, corn, onions, tomatoes, and garlic….can that filling get any better? It’s super simple and tastes great!
For the Breading:
12 overflowing tablespoons of flour
1 tablespoon baking powder
1 cup milk
1/2 cup oil
salt to taste (yeah, good luck.)
For the filling
1/2 lb ground beef
1 green pepper
1 small can of corn, drained (or you can use fresh corn, it doesn’t really matter)
2 small tomatoes, cut into large cubes
1 can tomato paste, plus two cans water
Prepare the filling:
In a skillet, brown the ground beef with the onions and peppers. Salt to taste. When the ground beef is cooked through, add in the fresh tomatoes, 2 cloves of minced garlic, corn, tomato paste, and water. Bring to a boil, then let it simmer til the tomatoes are soft.
Prepare the batter.
Preheat the oven to 350 F.In a medium bowl mix together the liquid ingredients. Add in the dry ingredients. Beat until smooth.
Grease a 9×13 pan. Pour a thin layer of batter in the bottom of the pan. Spoon the prepared filling on top of it. Pour the rest of the batter on top of it, being careful to cover all of the meat. Sprinkle cheese on top. Bake in a 350 oven for 30-35 minutes, or until a toothpick comes out clean. Let cool for 5 minutes, then cut into 12 pieces. Enjoy!
