Well, here is the start of my Christmas baking. Chocolate Chip Cookies. We needed cookies to eat while we decorated the tree. I made the mistake of handing them to Tim. I almost lost the whole bowl. Never hand all the cookies to a hungry guy. They magically disappear. Every. Single. One. Until you come to your senses and rescue them!
Chocolate Chip Cookies
1/3 cup butter
1/3 cup shortening
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 tsp vanilla
1 1/2 cups all purpose flour
1/2 tsp baking soda
1/2 tsp salt
a couple handfuls of chocolate chips
So… there are two different ways of doing this. If you do this the way with the mixer, just toss the first 5 ingredients in, then add in the other ones. Easy, right.
And then, there was me, 10 o’clock at night not wanting to make a ton of noise. So I did it by hand. Here goes those instructions.
Ahem. With both the butter and shortening softened, cream them together until they are nice and mixed. I used a spatula to do it, and it worked! Add the sugars. Mix it super well. Then add the egg and vanilla and stir it til it looks vile. Then it should be about right. Add the flour, baking soda, and salt. It takes alot of stirring to get it all mixed in. Add as many chocolate chips as you think looks right. Then pop each tray of cookies in a pre-heated 375 oven for 8-10 minutes.
